Total loss - insurance troubles

Had a collision in my 9-5 ('04, ARC); got rear ended when stopped at a light. The car was towed to a body shop where it has been sitting for a few days. According to my insurance's mobile adjustor, the car was deemed a total loss.
My insurance now wants me to release the vehicle and then tow my car to LA county to their salvage yard for determining its "exact" condition and then give a cash value. I am down in San Diego, so I asked them why they need to tow it up north for getting the ACV; they said that's the way it has to be done. Are they right? I am afraid that once I release the car, I would loose any leverage that I might have for a fair settlement. Do I need to release it before they determined the ACV? Would it be better to insist on a local adjustor?
Oh, yes, this is a reputable insurance company (has the first letter of the alphabet in it's name several times), and I have had multiple policies with them for over ten years. They keep emphasizing that they are non-profit and therefore, I could fully trust them... This sounds like a scam to me.
Greatly appreciate your input and advice!!
Thanks,
Matt
