Totally screwed by mechanic

A while back I was researching the parts and procedures of doing my own clutch replacement on my '93 900 TConv, and I found that the best price on parts was about $425-$450 including all the seals, fluid and shipping. So, I figure, "OK - let's see how much I am going to save by doing it myself" and called a mechanic here in Miami who said they do 2-3 clutches a week and it's a $600 job. Well, since I have a conference coming up that I'm preparing for, I figured it would be worth $200 to keep me working on the conference stuff and not lose the time to my car, as much as I wanted to say I did it myself. I haven't done anything with an engine since I rebuilt my volks nearly 20 years ago.
So, now the guy wants over $800 for it, giving me some story about "the clutch kit no longer includes the slave cylander" or something. What the F***?!
At $800 there was no freakin' way I was gonna give him the job. Frankly I am at the point of walking in tomorrow and telling him to take his shit out of my car and go freak himself and end up doing it myself anyway. Jesus christ.
What would you do?
Chris
