Makes me wonder about the ignition being too retarded. You might see if your timing is slow, or try bumping it up a few degrees.
Check your retard servo to see that it is not pulling too much timing out of the distributor when under boost. You can connect a mityvac or better yet a constant 10 psi signal to the retard servo and see how much the timing changes while at idle. It will give you a better idea if it is unrelated to the coolant issues since you have a new rad, etc etc.
Just covering the bases, but did you bleed the coolant system near the forward part of the engine? I've had an air lock that caused some weird engine temp behavior, and have always bled the coolant from that outlet up front.
And if there is any kind of a leak, it won't hold pressure in the system that lowers the coolant temp. So, you have to get that leak addressed to really make it all work correctly.
Did you connect the fans / relay mod so they operate together? That's noted in the Townsend site as well if it wasn't already mentioned by the other posters.
