I'm coming in a bit late on this, but I would be looking into what we called "cookie cutters" == in one extreme case, we downsize the wheel diameter to get a taller aspect ratio. Went from a 16 inch to a 15 inch and then used an 80 series tire as I recall. And made the width narrow, therefore the term "cookie cutters".
So, the trick is to stay narrow and tall aspect ratio -- go for 75 series or something tall. Hope you have stock suspension as if it is lowered, then you'll fight the OD of the tire vs the inner top of the fender well.
If you stay with narrow tires, then you don't have the problem with the fender lip interference.
The stock skid plate is barely enough for off roading -- what Blacksheep has will do a lot more to protect the underside. Finding one is the problem and as I recall, Blacksheep had one made.
