I've always fed a tiny bit of solder to the tip even when only remelting. It seems necessary, to have some liquid molten solder there to carry the heat down from the tip into the pad of old solder. If you get too much solder on a patch, you can usually carry some off on the tip of the iron, then spatter it off harmlessly into the air away from anything in particular, or rub it on an old newspaper or a dampened sponge.
It's good to work with a fairly small tip.
And make sure not to bridge solder over across tracks from one part of a circuit to another. If that happens, reapply the tip and kind of lead solder back to each side, it hasn't got anything to stick to on the plain board between leads and so it doesn't want to be there.
Cars are pretty rare in junkyards these days and nothing lingers there long, gets crushed right off. So it's harder to pick up a spare control unit to practice on.
