A known malady of 1997+ cars is the use of stretchy head bolts. I would check the top of your head bolts to see if they are the "bad" ones (grey with a washer - may need to pull one out for verification), then perhaps replacing with new head bolts before doing a head gasket. See one of my previous posts on this at the link. The illustration is from Anders ("Swededcar"), so should be taken seriously.
