Whoever swapped the six cylinder engine for the turbo four probably did you a favor - the six is basically an Opel engine and is known for leaks and problems. Besides the engine, transmission and the ECU, probably not much difference in the cars with different engines.
Your power steering system probably has air bubbles in it, which causes the noise. Before panicking, fill it up, REPLACE THE CAP, get the front wheels off the ground if you can, start the car and turn the steering wheel lock to lock many times. Unless you ran it for an extended period, there was probably some PS fluid in the system providing lubrication.
Regarding this car vs. your previous 9000s, this car is now older than your other cars, which of course leads to more problems.
