Here's my non-expert opinion and what I know from someone who paints cars:
Early 70s cars probably used lacquer paint and then in the later 70s they used enamel. Both are still options especially if you are doing the work yourself. I think both were replaced by modern base coat/clear coat paints because of the fumes released into the air as they dried. The modern base coat/clear coat finishes are more user friendly (easier to put on) and the clear coat means you do not have to wax the car as much to protect the color finish. My local auto paint supplier found GN8 (I have a Verona Green 96) in his mix book. The other big decision about the type of paint involves cost: A gallon of plain enamel auto paint costs about $150 and would probably be enough to paint your 95. Enough of the base coat/clear coat paint would cost you upwards of $600. (Both of these are just for the paint, not for a paint job.) You could probably get the entire car painted at MACCO or some place like that for $300-$500 and that might be a perfectly acceptable paint job depending on what you intend to do with the car. You certainly want a nice glossy finish for the outside of your car. Chassis parts and other under-the-hood parts would be a matte or semi-gloss and usually black. Good luck.
