For sure a lot of info flying back and forth here, slightly moving target...
Low oil pressure could just be a blocked pick-up? Who diagnosed the motor?
If it were mine I would just do a basic rebuild on the 2.3L motor and put it back together. In my mind this seems to be about the same amount of hassle as having to deal with swapping all the 2.0L parts around and getting a custom tune, and all that for a used motor.
Then if you truly go for a major power boost, you're looking at chassis upgrades since the convertible is a bit of a floppy mess to begin with.
Ultimately, the car could end up being a bit odd, which you or the next owner will have to deal with going forward.
I think the "GM" motor label is typically applied to the V6?
From what I recall on the 2.3L Viggen motor internals, the barrier to passing 350 HP/TQ are the pistons and rods, then there is the balance shaft delete.
