So, I'll take a stab at this. Quite a few people have swapped out a 2.0 for the 2.3 because the 2.0 revs higher. Generally it T5 motors 2.3 to a T5 2.0 but, as I understand it, you can also do the T5 2.0 motor for the T7. The transmission bolts right up. The issue that arises is the changeover from the intake T7 manifold so that the T5 ports and head are retained but the T7 plenum and throttle body feed the T5 runners. This has been done before where the T7 plenum runners are merged with the T5 runners. Its also possible to swap the T7 head for the T5 but, as mentioned, not all the water jacket holes line up. Going this route gives the better breathing T7 head on top of the T5 block. One must machine down the T5 pistons slightly or, reportedly, use the T5 head gasket. Those with the actual experience you need would be found at TrionicTuning.com. site. Also, SeriousSaab.com was a great reference for some of this kind of info BUT that site can now only be referenced by the Waybackmachine-the Internet Archive. Their suggestion for this type of thing was to retain T7 and change out the pistons rather than do an engine swap-this coming from a highly regarded UK Saab shop. The T7 pistons are the weak link in the T7 block but, from what I see from your plans, its more of a high performance build with the more robust T5 parts you are looking at. I don't have actual experience with this type of swap but the Trionictuning crowd would.

I do have some experience with T5 and T7 intake runners and heads and can say that the fuel injector location and ports are of a different shape. As mentioned before this can be resolved but you are also left with a tuning issue if you retain the T5 head because of the reduced T5 head valve flow. This can be resolved with tuning but adds complexity to the build. I have both a 9000 aero, a Viggen, and a 9-5. I don't perceive a problem with T7 blocks or performance once the piston issue has been addressed. The big advantage of T7 is the ability of matching torque demand by gear; this helps address transmissions issues and keeps high powered cars drivable/safe. However, having a "free" T5 engine is a big incentive for going that direction...
