I used to live in Lyons, and while I don't have too much info on Paris I would certainly recommend the view from the top of the Samaritaine department store (http://www.lasamaritaine.com/). It's free, in a great location, and you can SEE the Eifel Tower (something you can't exactly do when you pay tons of money to go up the Eifel Tower!).
Also, I know it isn't French cuisine but try "Le Marais" district (the Jewish quarter) for some great falafel.
If you plan on doing the museums get one of the special passes: they're cheaper, but more importantly you can usually ditch the long lines and head right in.
I've only done Chambord in the Loire Valley and it was certainly beautiful. I stayed in Blois for the night (very nice little town) and actually rented a bike to go out to the chateaus. A long day but very worth it.
