I lived in Mid-town for 2.5 years on a full expense account with no restrictions -- it was simply awesome. At any rate I hit everything in the Zygat guide at the time 1997-1999 and here is my input:
Steaks

Sparks - 46th between 2nd and 3rd - 212-687-4855 - Best in town
Palm - 2 locations right next to each other. Both are good. Great mashed potatoes. 840 Second Ave. (bet. 44th & 45th Sts.) (212) 697-5198
Mexican
=======
Rosa Mexicano - 1st and 58th - 212-753-7407 - Make their own guac. Very authentic. Great drink menu -- lots of Tequila.
Italian
=======
Trattoria Dell'arte - 212-245-9800 (7th & 57th) (Order the Veal Parmesan and tomato soup) - can be crowded, a bit touristy, but I think it is excellent for a tourist joint.
Il Mulino - Down in Greenwich village. Very busy place. Even if you make a reservation they make you wait 30 minutes...86 W. Third St. (bet. Sullivan & Thompson Sts.) (212) 673-3783
La Gioconda - Great for a quiet inexpensive dinner or perfect for lunch. I have been always happy with the good food for about $12 to $15 a plate. Small kitchen style restaurant. 226 E. 53rd St. (bet. 2nd & 3rd Aves.)
Sushi
=====
Nobu - Robert Dinerio's(sp?) place... Must know someone to get in quick -- email me if you are serious about going here and I will give you the 24 hour reservation hotline, otherwise its a month wait. Make sure you ask the waiter what appetizers the chef recommends and eat them all.
Sushisay - The best in town - sweet shrimp year round - New management took it over 6 months ago -- not sure if it is still as good. 51st bet Madison and Park - 212-755-1780
Sushi Yasuda - I have been only once, but very impressed. 204 E. 43rd St. (bet. 2nd & 3rd Aves.) (212) 972-1001
Tatany 52 - Not a joint for entertaining, but good sushi deals and very authentic. The lunch boxes are great.
Nippon - Nice place for a business sushi dinner. in case you can't get Sushisay on short notice this place is a great backup.
Seafood

Oceana - The one and only. Very good seafood. Go with the specials. 55 E. 54th St. (bet. Madison & Park Aves.) (212) 759-5941
Sea Grill - Not bad. I haven't had a bad meal yet. Might be seen as touristy. Down by skating rink in Rockefeller center.

Shun Lee Palace - Can't go wrong with this joint - 55th between 3rd and Lex - 212-371-8844
THAI/French

New American

Gramercy Tavern - A must. Very good. One of my all time favorites. Good luck getting in, but if you can.... - 20th between Broadway and Park - 212-477-0777

Smith & Wollensky - Just not that great...now they are a chain around the country.
Union Square Café - Many people really like this place. It has a good wine list, but to fufu for my taste
Le Cirque 2000 - Not what it used to be...
