Oh boy! Sounds like you've got yourself a situation there.
The dealer has definitely adopted a position that will keep them out of trouble, as many of the possible causes of fuel dilution will *never* cause a CEL. And as you stated, this could be very hard to troubleshoot.
In my experience, fuel dilution hasn't been associated with extended idling, but rather with many cold starts followed by insufficient warm-up time. You start the car cold, the FI system injects a lot of extra fuel to compensate for the cold engine, some of it makes it into the oil, and if the oil never gets warm enough to evaporate the gas it just accumulates.
So that's possibility #1: your driving situation. Could be exacerbated by leaking piston rings - a leakdown test might be a good thing to do.
One other thing that pops to mind is a little obscure. If your car is equipped with an oil cooler (it probably is) there's a thermostat that controls the flow of oil to the cooler. If the thermostat was stuck open and the weather is cold, the oil temperature could be running too low, which would cause the gas to have a harder time evaporating.
One last thing I can think of more likely *would* cause a CEL - a leaking fuel injector. You drive the car, shut it off, the injector drips fuel into the intake port and it runs past the possibly-open intake valve, down the cylinder wall, past the rings, and into the oil.
