One issue that I have heard of is electrical inspection. Typically, electrical work is inspected prior to enclosing the stud-framed walls with sheet rock. As SIPS panels already have the conduit and junction boxes installed, there is no way to inspect them. Check with the local building inspector if this is going to be an issue.
The fact that the electric is relatively "fixed" also means you need to have a very comprehensive electrical plan prior to fabrication of your SIPS panels.
An alternative option is to run your electric through your floor/ceiling space and have outlets in the floor. Easy if you are using floor trusses or even joists. If it is concrete slab-on-grade, then you again have to be sure about your outlet locations and such prior to placing the concrete.
I intend on designing and building a post and beam/hybrid utilizing SIPS panels this year. Currently looking for a suitable building lot.
Issues to be concerned with regarding a building lot include sewage disposal, zoning, and easements.
If you can hook up to county sewer lines, that is ideal. Otherwise you probably need a septic system and this'll require a perc test to determine if the soil can accept a traditional septic system. If the lot "fails to perc" you either have a basically unbuildable lot or will require an "alternative septic system". Buy a lot that percs or be prepared to pay extra for an alternative septic system.
Make sure your lot is zoned for your requirements. A lot of agricultural land is being divided up these days and some have minimum lot requirements of 10-25-50 acres per house. If you buy 1 acre of this land, you may have a private park to camp in, but won't be allowed to build. Check with the local gov't.
Get a copy of the plat prior to entering negotiations to purchase. This should show any public or private easements across the property. I assume a good title search would discover these, but you may not want to spend the effort on a certain lot if you know there's a 50 foot easement running across it due to underground gas lines or such.
