OT: Mountain bike vs. Hybrid bike?

I am a long time road/triathlon bike user but as I get older I get more concerned about sharing the roads with cars (well minivans and SUV's are actually the worse offenders). There are lots of great bike trails being developed that I would like to try out, but most of these are unpaved and not suitable for road bikes. I am thinking of getting either a mountain bike or possibly a hybrid so I can use these trails. I figure the hybrid would be better on the gravel trails I expect to ride most of the time, but if I occasionally wanted to try out some more serious single track I would obviously need a mountain bike.
I guess my question is whether a hybrid bike will be so much better than a mountain bike on dirt roads and wide gravel trails that this would outweigh the greater utility of the mountain bike?
Also, does anybody have any model recommendations?
