Hey there, I am a long-time mountain biker who recently purchased a road bike to diversify my riding. I have owned a few different moutain bikes, and I've ridden a fair number of friends' bikes etc. I think that a mountain bike is the way to go, rather than a hybrid. However, if you will simply be on gravel roads and rather tame paths, you should look into a cyclo-cross, a high-performance hybrid. They tend to ride a little more like a road bike with respect to body position and efficiency.
I have become a very big fan of Klein bikes. Their frames are top-notch...among the lightest in the industry, and they are very responsive.
Would you look for a full-suspension? That's the next question, huh?
Ride a few bikes, find out if you would like to get into the single track - (My favorite kind of riding, by the way) Maybe its not your cup-o-tea...at least you'll know.
