I'd second the vote to look at a cyclo-cross bike. Mine only has two chainrings (18speeds), and sometimes I'm wanting more. Other than that, it's handled every terrain that I've taken my mountain bike on, mud, single track, roots, a teeter-totter. Plus, it's much faster when I'm on the road or those crushed-limestone urban paths.
I just got back froma two-night bike/camping trip up on the San Juan Islands here in Washington. My girlfriend and I carried a bit of food, clothing, sleeping bags, and a tent on panniers. On my cyclo bike I rolled much easier than she on her mountain bike. Much less effort.
Also, my cyclo cross has a small front shock, which is nice.
If you go with a mountain bike, I'd look at a full-suspension one. (disagreeing with an earlier poster). As much as I love my hardtail, I'd be faster and more effecient and more comfortable if I could stay seated more often (which full suspension helps). My hardtail makes me stand too often to soak up going over roots and such.
Don't be afraid to borrow or rent bikes to find out what you like!
