doable. it is more a matter of making sure you are comfy with the procedure and having parts on hand more than level of difficulty. you did the di and plugs yourself, you could certainly do the t/stat and hoses.
in trying these things yourself you will become more comfortable and able to do them, and if you should run into problems, there is this bb as well as a last resort calling your mechanic and saying "hey, i'm having my car towed in..."
as comfort level and ability increase, you can do the "harder" or more time consuming jobs yourself as well. and before you say no i can't, you would be able to do the waterpump yourself as well :-)
just a few positive words from someone who started out in same place years ago with a british car. start with good basic tools and a good manual and you might be surprised. mark :-)
