You should get them to show you a movie that you are familiar with. Set the color, brightness, saturation etc to neutral and see if the color display is natural enough. If you have a scene that is pretty dark and you actually see nothing, that is probably not a good set. Never play a cartoon as the color tends to be a bit exaggerated and bright. The color will appear fantastic. Refresh rate is probably not an issue for today's plasma screen. Get the one you like best.
BTW, understand Sumsung is probably the largest manufacturer of plasma screen today. So what you get is probably the same thing except the circuitry behind the set is different and that explain the difference in color reproduction. The sound quality from a plasma (with speakers) understandably is also poorer than conventional CRT TV with a huge box..
