12 hours is a healthy layover. Remember you still need to get back to CDG and thru security (allow 2 hrs to be safe).

Get off the plane, hit and ATM with your cash card and get some Euros. Then grab the train from CDG into the city. It is well marked and takes about 30 mins. I'd get off at Notre Dame so you can see that. There may be a line to go up or get in. Wait or not--- your call--but worth doing both.

Leave ND, cross the Seine and get on the Batobus (Boat Bus) and use that to ride down the river to the Eiffel Tower. Paris is great to see from the river. Buy a day pass on the boat (maybe 15 euros ?) and you can get on an off all you want. In November the line at la Tour Eiffel shouldn't be too bad so do go up if the weather is decent. Alternatively take a cab.

You can take days in the Louvre but you may be able to do a quick cruise thru. The Batobus stops at near the Louvre. be aware, though, the Louvre is HUGE.

What else...
Walk around the Left Bank, opposite Notre Dame.
Eat and drink in a sidewalk cafe.
Stroll along the Seine.
Eat a sandwich in a baguette roll
If it's not cold sit at Pont Neuf and enjoy the view
Ride Batobus and enjoy the bridges
Check out the barges people live on along the Seine.

I've only been 2x, once solo, once with family. So much to see and do. I don't like cities but I'd go to Paris anytime. New York is a sideshow compared to the City of Lights.

Try to speak a little French. I find Parisians are fine about English speakers as long as you try. Then they switch to English. Just be friendly and polite. Self effacing is good, too.
