Idiot's question: how to use a 2 ton jack?

I want to buy a 2 ton jack to change snow tires back to summer tires. I've always used the spare tire jack in the past. For those unfamiliar with a 2 ton jack, a link is shown.
How do you use it?
1. Can you lock the wheels so the car doesn't come crashing down?
2. Can you just use it on one of the 4 corners of the car to change one tire at a time? I don't want to buy jack stands.
I was going to buy it then loosen the bolts, jack the car up, place a tire under the car to provide some cushion if it drops (just being cautious), take off wheel/tire, put replacement wheel/tire, screw bolts on, lower car, tight and torque bolts. OK?
