Definatly go with 1080p this will give you the full HD definition that is available today.
P = Progressive and I = Interlaced.
Refresh rate is important as is the true black level. You will get much better black levels from plasma, but it depends on what type of light you are watching in as well. The brighter the room the better black level you want to have.
Also look at how many hours they are expected to last, Plasma is getting more and more equal to LCD all of the time.
I personally went with a Sony LCD projection system (their Grand Wega line), as it allows you to replace the projection bulb instead of having to replace the entire TV when it burns out.
