I'm sure others will be able to provide more input, but 1080 and 720 is the number of horizontal lines resolved by the set. If you're getting a flat panel set and its a big one, you'll want to get 1080 simply because that's the way things are going. That's the new HD. It's really like the pixel resolution of monitors at native resolution.
Now, 1080p and 1080i both have 1080 horizontal lines that display information, but the "i" indicates that they're interlaced... which means that with every refresh, only half the lines get recreated (every-other line). The "p" stands for progressive, which means that with each refresh, every line is refreshed. So, a progressive scan screen resolves fast-moving images with much better clarity... it also means twice the amount of work to produce that image, so they're more expensive.
