Shortly before we married my wife-to-be plugged the drum trap of our kitchen sink with potato peelings she had force fed the disposal. Thirty years later the peelings still go straight to the trash. No more disposal for them!
We have had a disposal in both homes we have owned and they are a convenience item, but I think I could easily live without one. In addition to incompatibility with grease and some food waste, they can consume a lot of water and are one more item to clean and maintain. Disposals need to be periodically cleaned so they don't stink up the kitchen.
I would recommend a lower power unit. If the food waste can't be handled by a 1/4 HP to 1/3 HP unit, you are misusing the disposal.
