You can't go wrong with either Canon OR Nikon...the printed/displayed difs are so small...unless you engage in "pixel peeping" of images shot at the extremes of aperture/lighting, etc.
Another vote for buying the one that feels best, one that you can "work" while actually in the field under pressure. In nature photogrphy, if you take your eyes off the viewfinder/LCD to twiddle a dial, you may lose the shot. If you've ever found the "right" shotgun, you get the idea.
If you don't want to learn, practice, and make it second nature, like the pros, consider one of the smaller, much more portable cameras that will give you excellent results w/o the learning curve and incredible investment in long zooms for nature...not talking bird feeders and park squirrels.
The camera that's been a wonderful, constant companion lately has been a Panasonic Lumix LX3. Back jersey pocket while bike riding, othewise in the center console of my 9-5 station (I mean "sport" or "combi" whatever)wagon...always with me.
I've had wonderful results with the Canon Elph line of compact digitals.
The compacts also offer surprisingly good video capability.
My guess is that the vast majority of DSLRs are unpacked, carried proudly to the local graduation/soccer game, then put away in a drawer due to bulkiness and the learning curve to make them justify the expense.
Remember that it's the "eye" not the machine that makes the picture. And if you love your subject, you'll always cherish the pics regardless of the camera.
Best,
Greg (serious hobbyist) B.
