tile as well if your objective is easy DIY and durability. Solid surface does look good, but can have issues with staining and damage if your tenant decides to not use a cutting board. The install of solid surface may be DIY, but unless you have a lot of specialized equipment, the manufacturing is not.
Concrete can be diy, but it's VERY heavy. Granite, solid surface, and concrete can be a real pain to repair if it's damaged from abuse - and repairs are almost always visible.
Tile is easy to diy, can take a lot of abuse, and you can buy extra so if any do get damaged, it's an easy replacement. Just make sure you use a good rubberized sealant under the mastic (I forget what it's called, but it's red and you can get it at any borg).
