I store my Viggen each winter, and I do not do this. The reason being is that you should not be concerned over 'saving the tires.' You'll be replacing them anyway....they're tires and they age. Reason I don't do it is because a car isn't meant to be supported with all of its weight by its chassis for a long time, which can cause it to stress. A car is meant to be on its four wheels. I've stopped doing this because I'd much rather fix suspension components/tires than have the worry in my head about the possibility of the frame being stressed.
2-3 years is a long time. You'll definitely want some sort of silica gel to absorb humidity (and they have to be reactivated after a while). In fact, you may want to think about a dehumidifier to control the humidity levels. You'll maybe even want to change the oil more than once during this long period of time, if possible.
Gas is another issue. You can get fuel stabilizer, but it will not be suitable to keep the gas fresh for this lenghty time. What I can tell you is you'll have to use stabilizer, fill the tank until full and then it will have to definitely be drained out before you start the car...this is for certain.
Leather will need to be treated, as well as other parts of the car and it will have to be done really well...again, more than once if possible. The leather treatment needs to be reboosted.
Leave the parking break OFF (the cable will lose tension).
As others have noted, use oil in the cylinders. I do this every winter and for you, it will be extremely important to do right. You need to coat the walls of the cylinder with oil.
You should change the coolant and, in fact, ALL fluids should be flushed.
Before storing, the car needs a fresh oil change and it needs to be driven until everything is nice and hot (get rid of all of the moisture). Then you can do the oil in the cylinders bit (when it is cold)
Windshield wipers should be removed or roll up and old t-shirt and place it under them.
Glycerin on all of the weatherstripping...they will dry out. I use Zymol Seal. Leave the doors open just a crack.
Before starting the car, I would imagine you should have to change the oil before hand.... among other things.
Make a list of everything so it can be undone, don't forget anything. Lucky you on having such a new car. Take real good care of it and ask us for any other advice!
