I an old house of your age + construction, the absolute best solution is blown in cellulose. It does not need a vapour barrier + will allow you to keep the character of the house intact. You can DIY this. Do the attic also.
Trying to make a new house by tearing out all the lathe and plaster is costly + won't work well unless you do the whole damn thing (lathe and plaster btw is a comparatively high end wall despite the maintenance concerns of some)... the problem with fibreglass is it *needs* a vapour barrier or you will get condensation in the walls + rot, and if you don't get all the details right (which basically involves doing the whole house) you will get vapour leaks + rot problems.
Anyway, that is my 2 cents (I have extensively renovated/restored my own late 1800's northern house of similar construction - don't even get me started about windows!)...
