I think what you are saying is directional tires can be (and most often are) a mirror image if you drew a line down the center. My understanding is that is referred to as symmetric. You can flip that tire over on the rim, and then flip the rim over to the other side of the car (it still has to point forward of course, so one would do this in pairs, or usually all 4).
Then there are symmetric tires that are also non-directional + those are the ones I find very mediocre (at least the ones I've tried). I agree with you on that.
There are advantages to having different tread blocks on the inside + outside of the rim (asymmetric). But I would think that, especially if there are curves in the profile, in most cases there should be a left hand and right hand tire, or it's the "backwards running shoe" compromise... Some tires (like the Nokian V or Z G2), are asymmetric, but have a minimal proportion of curved features, so I'm ok with that. Many asymmetrics do very well in testing, so I'm trying to be open to that option... but, like you, I am gravitating to symmetric directionals...
