if you want eg a satin finish, do all the early coats in high gloss, and only use satin for the final finish coat. You will get a cleaner satin look (not so cloudy). Just be aware of thickness buildup. I generally prefer wipe on finishes like tung oil, or wipe on poly or varnish, as they look less "plastic", but are also less protective.
