When we bought the wife's Outback a couple of years ago we consciously decided that we did not want the "Eyesight" system since neither of us had a high comfort level with that technology taking over control of the vehicle.

At this point though it wouldn't surprise me if it's standard and cannot be turned off. That is probably the case with many if not most cars now and I'm sure it will become standard in everything.

In general I think new cars have a lot of questionable technology. For my own ride I'll be sticking with my old Saabs as long as possible.
