Since car is giving you numeric "PXXXX" trouble codes, I assume that it is a 1996 - 1998 model. Cars after 1994 have their temperature gauges buffered, meaning that you will not get an accurate reading of what is going on - designed to give a reading of about "8:30" unless it's overheating. If it's just getting into the normal zone, it may not be warming up properly. It's pretty easy to check out the resistance of the coolant temp sensor, and if it's OK I would suspect the thermostat - new parts can be defective.
Re the O2 sensor, is it a Bosch or SMP sensor? I would not trust others. Are you sure that the splice connections are good with no shorts? If yes to both, you may have to bite the bullet, pull apart the connector to the wiring harness behind the engine and measure the resistance of the wiring and the sensor's heater circuit. It's possible that whoever was in there last time destroyed the wires or their attachment to the connector by twisting them severely. When new, I recall that the resistance of the heater circuit should be very low, under 10 Ohms (check this!).
