Welding cast iron is much much more difficult than welding stainless - I would go so far as to say a beginner with a half-decent machine would do a decent job on your nice clean 304SS downpipe.
I wouldn't trust myself to get welding in bungs on your exhaust manifold right the first time, I'd want to sacrifice an extra one to mess with getting it set up correctly before trying to do it on the car.
I also try not to weld anything attached to the car if I have the choice, too easy to bumm up the electronics if your machine puts out a healthy high frequency arc-start too - if you do make sure you disconnect the battery and unplug the ECU just to be safe, and because they're easy to get to.
Honestly probably the only reason you need multi-cylinder pickups even with live tuning is to dial in individual cylinders if you're on the ragged edge. The only time otherwise you'd have drastically different mixture is if one cylinder misfires and dumps a chamber of fresh oxygen out the exhaust which will throw the readings off a little, but T7 is pretty good at detecting knock and misfire events anyway, and then you need to figure out while it misses.
For what you're trying to see I think you'll be happy putting them in the downpipe.
