As far as the O2 sensor bung not seeing stress, the stress induced by the repeated heating and cooling cycles are more than you would initially think. Especially if you have a mild steel bung welded to a cast iron manifold. The different materials will expand at different rates which may cause cracking issues.
If you are going to weld it, use a filler rod with a high nickel content. That makes the weld a little more ductile than it would otherwise be and will lessen the chance of thermal cracking. I have tig welded cast iron before with no issues, but just be aware of the risks before you go ahead with it.
