I think that section you're referring to is talking about bleeding the slave after installing it. It should be fully installed in that case, pressing up against the fingers. The spacer should be out before you bleed. If you're removing the slave the spacer will be in, and I wouldn't worry about over-extending it. I'll be replacing it anyway. Or if you're replacing the seals in the same slave housing, it doesn't matter either.
The Bentley is indeed an abridged version of a late version of the shop manual. I have the manual downloaded to my hard drive and use it as my reference material.
I've only done this once, but I've attended a master doing it at least twice before. The hardest part I remember was getting it out. It should go together a lot easier, unless you're like me and decide to go further while you're in there and remove the pressure plate to replace the pilot bearing, whether it needs it or not. Don't forget to seal the pressure plate bolts when reassembling, with sealant. Not locktite. The manual mentions this.
