Correct - the oil thermostat has no affect on drainage. I suspect it's a combination of the oil line being too large a diameter to syphon, and the way it has a significant high spot in the hose.
Let me try explaining the cooler circuit again: You have a a straight flow from the pump->filter->engine. The oil cooler forms a loop out the side of the circuit between the pump and the filter. Under normal circumstances - cold engine - the thermostat is OPEN - allowing oil to bypass the cooler by taking the path of least resistance to the filter. As the bimetallic heats up, it closes off that opening, which forces oil to take the cooler loop.
