Snapping a bolt on the rear mount is not a real problem since it uses more-or-less conventional nuts and bolts. I picked up a suitable replacement at a local hardware store. Not metric (they didn't have one suitable) but a close-fit grade 8 SAE type. I took the remains of one of the old mounts with me to make sure it was a good fit.
However the front mount uses captive nuts inside the subframe and if you snap one of those off it's going to be a world of hurt. So I'd say if doing this job and the bolts on the front mount are putting up heavy resistance, back off and maybe hit with a torch, and carefully work it back and forth to hopefully break it free.
