The color mismatch on the seats most likely means they just came from another car. In the photos they appear to be original 99 seats and I think the upholstery pattern is right for 1979. It could be that they had the original ones reupholstered, but in that case you would think they would have matched the color better.
It is good to hear it run. You should stipulate that you want to start it from cold (not run since previous day) so you can hear any cold engine noises and evaluate that the fuel injection is working OK. If possible, drive it and then let it idle until the cooling fan comes on and make sure that is working and the thermostat is OK. Also, if you can get it fully hot, then shut it off and let it sit for 30 minutes with the hood closed and then start it again that will tell you if there are any fuel pressure leakdown/hot start issues (although those were pretty well solved by 1979).
