I have nothing against wagons - I've owned two (not Saabs) in the past. But the 9-5 wagon just doesn't do a thing for me, and its high price doesn't help. I've driven the 9-5 wagon many times, and it doesn't feel as responsive as my '97 900SET did.
When I was shopping in April, I seriously considered the 9-5 wagon, but when I realized that I was looking northwards of $40K, I took a step back and reconsidered. Then I looked at the 9-3SS and fell in love... Yeah, it's not as versatile as the hatchback (or wagon), but it does the job for me 95% of the time, and for the other 5%, I have other options (a utility trailer or my wife's Odyssey, though she hated the idea of me buying a sedan because my hatchbacks have always been the major stuff-haulers in our family.)
I do like hatchbacks, a lot, and the Saab hatchback was good looking and exceptionally versatile. For those of you who would like an Epsilon-based hatchback, there's always the Chevy Malibu Maxx :-)
