to inform your host or guide so they understand your needs. Remember there are vegetarian (mostly with Buddhist influence) in China. So, there are plenty of Chinese vegetarian dishes, such as Buddhist Delight and similar dishes. In fact, there are special vegetarian resturants, especially in large cities, but I am not sure about Shenyang. I hope you do not require Kosher food, that would be a bit of a challenge :-).
You may have a bit of a problem when invited to a Chinese banquet as various meat dishes are favored. You may want to explain to your host, especially those sitting next to you at a meal or banquet that you are a straight vegetarian so they don't keep pushing meat on your plate. It is ok not to eat everything on your plate however. When it comes to eating, think of your Chinese hosts as Italian (or Jewish ...) mothers, the more you eat, the happier they become. So take a few of your meat eating colleagues along to help out. I don't think you will get dog soup but turtle or frog soup is a possibility. Anyway, your hosts may decide to give you a real western meal and fly in some steaks from Australia :-0.
