Most Italian restaurants (at least on the East Coast) were opened by immigrants from the south (e.g., Napoli) so that's the image most people have of Italian food - tomato-sauce and pasta based, with red checked tablecloths and straw Chianti bottles hanging from the ceiling. To my mother, that's a "real" Italian restaurant and woe be to anyone who takes here elsewhere.
Now that Tuscany has become so popular, people are noticing that middle- and northern-Italian food has very little tomato and features a wider array of meats and prep styles.
