I've delayed my kitchen project until the fall because of other projects. If you're still looking for a flooring material, take a look at cork. At first, I thought that cork sounded like a weird flooring material, particularly for the kitchen. But cork, a tree bark, is naturally waterproof, easy on the feet/spongy, and available in a fair number of colors. You can get it in 12" squares or in floating floor boards lkike Pergo. I'll be doing the squares because there were more color choices. Take a look at http://www.expanko.com or Goggle "cork floors".
