Michael,
First of all, nice car! Always liked NSX's.
Second, I did something like 5 trips of 600 miles or more last year. Last one being a MI to NY to CT to MI with a Saab buddy. Next week, I'm doing a MI to VT to RI to MI. I plan to only eat minimal, but drink LOTS of water. When travelling by myself, I have couple of gallons of water readily available. Hydration is always good for the body and keeps you more refreshed and alert. I don't have to go to bathroom for number 2. I hate using rest area toilets! But water forces me to stop frequently for quick number 1's. Also, due to physical inactivity of long driving, if I start munching, it seems like I gain 10 lbs after the trip. Versus if I only drink water mostly, I lose 5 lbs. I also like to drive with windows open sometimes.
Couple of other 'odd' things I do to keep awake. I normally travel 5 to 10 mph's over the speed limit, which is considered 'safely' over the limit. But then once in a while, there would be someone who passes me at ridiculous speeds. I would then follow this person at similar speeds, but a safe distance of 1/8 mile and watch for any cops coming up behind me. This way, I'm 'safely' travelling to avoid tickets, yet not aggravate the speedy driver and cause some sort of 'race'. It's just a little game I play to keep the driving more interesting.
I also carry a portable GPS unit. I check on that once in a while to see my actual progress.
I usually don't carry CD's. I surf the regional radio stations to see what kind of stations there are. That keeps me more alert than my own CD's which sometimes keeps me bored.
Someone advised against using cruise control. But I differ on this point for two reasons. I HATE getting tickets and it seems that people get pulled over for 'oops, I wasn't watching the speedo'. Travelling for such long distances on the highway, I fall into sensation that I am NOT going that fast. So I drive at a speed that I think is the right speed and find myself traversing at 80+ mph, which in most states, I can get a ticket. I'm sure with an NSX, 100mph would feel 'right'. So I would set the cruise and not have to worry about speeding. Also, sometimes, my feet would get tired and I would travel at less than speed limit. Then I'm losing time. So I set the cruise at 'base' speed and use the accelerator to 'play around' a bit.
Anyways, some of my driving tidbits. Good luck and have fun with the NSX!
