Just how much video editing do you do every day? If you render to DVD just once or twice a week a small difference in performance probably is not significant.
During football season I capture game clips directly to disk (no tape!) using Firewire to my 1GHz G4 powerbook. This same machine later does development of review and scout DVDs, also the end-of-year "highlight" DVD with effects and music. The G5 iMac should do fine for home productions.
When pricing the PC vs. the Mac be sure to include the price of software. iMovie is included and, as others have noted, does a great job.
