There is nothing quite like a steel made-in-Italy road bike. Hope it works out for you, fit wise. Enjoy the ride and tradition!
Definitely make the move to clipless pedals. Once past the brief learning curve, there is no going back. I use SPDs on the mountain bike and tandem, and Speedplay road pedals on the road bike. Both work great. SPD's are pretty good for walking, Speedplay road cleats have a deadly lack of traction and force a toes-up position.
Changing pedal systems is a costly and complicated process when you have several pairs of shoes and several bikes but, if I was to start from scratch, I would look hard at the Crank Bros pedals.
