I am in Virginia, near DC, land of humid summers. We found the variable thermostats will make a difference, but nowhere near as much as keeping the blinds closed and using low-E glass with the double pane windows.
We added to the insulation in the attic (8" over 6" existing) the year after we bought the house, and we can have the power off all day and only have the temperature go up 4-6 degrees over the day. In addition we have an attic fan and a full length peak vent and light shingles. (With the outside at 95+)
Past tests of a higher daytime settings revealed the savings was not that great on the monthly bill, and we too have a dog so we now set it at 74-76 round the clock and find it fine. .
One contributor to heat we found were refrigerators. Make sure any exposed coils in the back are clean and not covered in dust or cooking film. It lowers the heat and increases the efficiency of the freezer.
