You need to make sure the fit is correct. That is very important. I can see that you're already trying to get the feel for it.
Also, I'd think about getting Shimano 105 or better for Shimano. The Sora on the Trek 1000 doesn't seem to shift as well and doesn't seem to hold a tune-up as long. Just my opinion.
Personally, I use Campagnolo components but you do pay much more for those. I'd say the value leader is Shimano 105.
About frame material? That's really up to you. I have steel, carbon, and aluminum and like each one for different reasons. My favorites are carbon, steel, and aluminum in that order. :) Titanium is nice too and will probably last a long time. I chose the Bianchi carbon over the titanium based on price. I liked them both and like the Bianchi geometry for myself.
