2 boys (1 and 3.5) and frequent travel with my mother and sister in law put us right into minivan territory. The convenience, space, and safety cannot be beat.
Our '03 Odyssey sports a 240 hp VTEC-powered V6. It can hussle along quite well, even with 500 lbs of mulch in the back. For such a large car, it drives remarkably car-like, stops in a hurry, and steers well. It's not a Swedish Sportwagon, but it's quite pleasant to drive.
You can pretty much choose at random from the latest ones and do very well: the Odyssey, Toyota Sienna, Hyundai Entourage, Kia Sedona. For the 'last gen' cars, the 2nd gen (99-2004) Odyssey beats all comers for engine, braking, handling, and features.
The only thing that really bugs me are the seats - Japanese seats are just not as comfy as Swedish ones. If Volvo made a minivan, I'd buy it just for the seats. Honda is bringing a V6 diesel-powered Odyssey in 2009ish...that may prompt my first new car purchase ever.
