I have also worked in small businesses nearly my entire life (except for Polaroid) and what you say is very perceptive. That is precisely one of the biggest differences between small and large businesses.
R.T. - if you have a choice spend some time in each. Then you will see what appeals to you more. Big business is stable, and a good place to learn the proper way to do things. Small business is faster, and you can have more responsibility and see more of the entire business and how it works. You don't get much training, though, and often you can pick up bad habits that may be hard to undo later. Some small businesses take shortcuts that make them more nimble. Some just screw up because they don't know any better. There is a fine line between the two sometimes.
