FWIW:
Sit down with a tablet and make a list of your twelve "Biggest Hits" to date. Take some time to do a thorough job on this, describing what you enjoyed about each achievement. What themes seem to recur? Working by yourself or with others? Executing someone else's plan or following through on your own. Doing or thinking? Clear goals or open ended?
Consider taking a work style profile test like Myers Briggs. It can help you make an informed career choice based on your individual preferences. It can also help you modify your work style to fit a work culture.
Small vs. Big -- Nowadays big companies act more like a collection of small companies -- i.e., they don't want winners to subsidize losers. So that seat of-the-pants feel is pretty common, I'd say. Might be hard to get away from.
You said you like to plan. Does that mean you see yourself as a planner? Or do you just prefer to have a workplan and stick to it? Could it be that you just like the feeling of things being settled no matter how circumstances change?
A large company usually has ample resources available to employees. Small companies have to scramble. But you could build a heckuva resume of solid achievements in a small company and use that to move to a better job in a better-resourced large company.
